When you see Chef Lo, you’re seeing one face of a much bigger team.

Behind every plate, tasting, wedding and event are the cooks, servers, bartenders, captains, planners and team members making sure everything comes together the way it should. Millenia has grown through hospitality, and that only works because of the people carrying it out every day.

A little Millenia throwback for you.

Long before hundreds of weddings and events filled the calendar, Chef Lo was already doing the work, right down to cutting the cake himself.

We can’t promise the hair gives us an exact date, but it’s definitely giving early-2000s energy. What we do know is that moments like this are part of nearly two decades of Millenia history in Central Florida.

A lot has grown since then. The heart behind the hospitality hasn’t changed.

Some version of this line appears again and again in the feedback Millenia receives, and it still means a lot every time.

A wedding meal has a unique job. It needs to serve an entire room well while still feeling like something worth remembering. For our team, that also means paying attention to the people around the plate, from dietary needs to making sure the couple actually has time to eat.

When guests are still talking about dinner after the celebration is over, that is exactly the kind of memory we hope to leave behind.

Hospitality shows up in small moments.

Millenia’s team is trained around simple service principles: acknowledge people, make eye contact, present yourself professionally, engage guests genuinely and take ownership when something needs to be handled.

Those standards show up in the details guests tend to remember. Someone making sure the couple gets dinner. A staff member helping a family member who needs an extra hand. A bartender paying attention to the room before a line ever becomes a problem.

That level of care is intentional.

Chef Lo’s connection to Central Florida goes back long before Millenia.

After growing up in Polk County, he pursued culinary training at Johnson & Wales and built experience through hospitality environments including Ga***rd Palms and Lakeland Yacht Club. Over time, that foundation grew into the company Millenia is today.

His approach has always centered on people. Good food matters, but so does how a room is welcomed, how a guest is treated and how the team responds when something needs attention.

That philosophy still shapes the way Millenia serves today.
