Many thanks to the awesome Jason Mahnke for posing for a photo and reading about our Taste of the Alps Cheese Classes in today's Wisconsin State Journal! Thank you Reporter Barry Adams and Photographer Amber Arnold for spending last Sunday evening with us, tasting and learning about Old World, raw-milk, long-aged and original Alpine and Alpage cheeses made by the cheesemaker owners of Gourmino Swiss Cheeses Cooperative.

And a HUGE thank you Roland Sahli, Master Cheesemaker and Affineur at Gourmino, for spending a FULL TWO WEEKS with Uriah and Jeanne, criss-crossing the Alps of Switzerland and teaching us about Gruyere, Hornbacher, Emmentaler, Rockflower, L'Etivaz, Appenzeller, Sbrinz and the art and science of small-batch, traditional cheese through the Curd to Counter Program at Cheese Journeys with the fabulous Anna Juhl.

Here's a link to the full article (likely behind a paywall, but hey, we all need solid journalism to stay alive in this country). Uriah & Jeanne are teaching a total of five classes this fall, and most are sold out, but a few tickets still exist for November 1 (link to buy tickets in comments).

Firefly will be closed Friday, October 2 for a staff wedding. After nearly 10 years of running this place, we (Uriah and Jeanne) are, we daresay, wise enough to realize some things only happen once. Over the years, we’ve adopted quite a few folks who work for us. On Friday, we have the opportunity to watch two of our favorites marry each other. Please wish Collin & Anna a hearty congratulations and we'll see you all on Monday.

We are having so much fun on Dolly Parton Day! Thank you to everyone for dressing up to honor the Queen and rocking out to 9-to-5 on the stereo at 9 am on 9-25 as Uriah walked cinnamon rolls to the case with the giant cowbell. Y'all are the best!

Friday, September 25 is Dolly Parton day! 9-2-5! Jeanne and Uriah give you a behind-the-scenes sneak peak at decorating the Firefly lobby. In good news, Uriah did not fall off the ladder and will be here on Friday to make cinnamon rolls!

Friday, Sept. 25 is Dolly Parton Day! It's 9-2-5 (9-to-5, get it?) so we're celebrating in style with Dolly Parton Pop Tarts, Cup of Ambition (Housemade Cold Brew with Strawberry Cold Foam), Islands in the Stream Smoothie (a non-alcoholic pina colada with frozen pineapple & mango) and Dolly's Banana Bread Latte. We're open until 2 pm, so be sure to come in and get your goodies before the 1:30 pm Homecoming Parade!

Our first three classes have sold old out, so we're adding another! Join us Sunday evening, October 25 for a two-hour cheese tasting & storytelling experience -- An Art You Can Taste: Six Small-Batch, Aged Cheeses of Switzerland.

The backstory: Firefly owners Uriah & Jeanne spent two weeks studying with Roland Sahli, a Master Cheesemaker and Affineur for Gourmino Cheese, a small, cheesemaker-owned cooperative in Switzerland. Roland gave us the opportunity to experience the art and science of cheesemaking and cheese aging with six different master cheesemakers in different regions of the country, including making L’Etivaz over an open fire, flipping 200-pound wheels of Emmentaler in the Emmental Valley, and learning how to grade giant wheels of Gruyere inside a mountain cheese cave.

As Roland told us time and time again: “The role of an affineur is to see the potential of a cheese.” After learning the art and science behind the craft of making and aging big wheels of cheese, your role at this class will be to taste and compare six cheeses made and aged by five different Master Cheesemakers in Switzerland and learning the stories of each:

• Hornbacher, made by Gourmino World Champion Master Cheesemaker Michael Spycher
• L’Etivaz AOP: a raw-milk alpine cheese made over an open fire: we’ll create the world’s rarest Grilled Cheese
• Emmentaler AOP, made by Gourmino Master Cheesemaker Fritz Baumgartner
• Le Gruyère AOP, made by Gourmino Master Cheesemaker Urs Leuenberger
• Berner Hobelkase AOP, made by Master Cheesemaker René Ryser at Molkerei Gstaad
• Rockflower, made by Gourmino Master Cheesemaker Silvio Schöpfer, nicknamed “The Baked Potato Cheese”

Cost is $65 per person and includes complimentary w**e, sparkling apple c***r and pairing accoutrements. Classes are held at Firefly Coffeehouse & Artisan Cheese, located at 114 North Main Street in downtown Oregon, Wis.

Special Bonus: a limited number of small wedges of several of these cheeses will be available for sale at the end of class.
