Crawfish prices for week of June 8 - June 13

Southeast Missouri Purged $4.00/pound.

My Missouri crawfish are coming in abundance now and are the largest average size since the Missouri crawfish season started in mid April.

These crawfish are caught in my pond and transported to the crawfish house where the temperature is kept at constant 57 degrees. This is the same temperature as the fresh well water that is being aerated and flushed over them until they are bagged and handed out to the customer. After 48 hours in the cold aerated water, these crawfish will be the cleanest crawfish you have ever had.

If this year goes like last, I will have crawfish from my pond through July 4th week. I could have them some longer, but at some point I will need to drain the pond and get the next years food crop of rice planted.

Joshua McKee and infant son stopped by Crawfish Crossing early this week as they were traveling from Mississippi where Joshua’s wife is serving active duty in the Air Force. Joshua is currently working on a master’s program having something to do with air and space (Josh told me but I forgot). Josh grabbed a bag of southeast Missouri crawfish to take home to Wisconsin so that he could introduce this southern phenomenon to his northern tribe. Thank you Joshua for sharing your event with us.

The temperature is finally starting to warm up. Hopefully this will up the catch here at Crawfish Crossing. The warmer weather sure is making the geese happy!😁

Crawfish prices had a bump up from last week due to lower catch rate in Louisiana.

Week of May 4 - May 9

Louisiana Washed $4.00/pound

My Louisiana washed crawfish start out freshly caught and then dropped into a large commercial vat filled with fresh flowing water to float out mud and other undesirable material. A conveyer then lifts the crawfish onto a moving grading line where they are continually sprayed with fresh water and sorted into the desired sizes where any dead or too small crawfish are removed. The balance of these crawfish that come to me are then combined for a good field average size crawfish removing only the dead and too small. The crawfish are then bagged and rushed overnight to a pickup location in Arkansas where the crawfish are loaded onto my refrigerated trailer and complete the rest of the journey to Southeast Missouri.

My Missouri crawfish are handled in a similar manner as the method used in the Louisiana Crawfish Company YouTube video. My tanks are flushed with fresh aerated water to remove mud and debris and allowed 24-72 hours to purge digestive tract.

The peak volume for my pond was mid May in 2025. Catch volume remained very good through July 4th week. At some point I have to drain and replant pond to rice for the next year.

The quality of these crawfish is excellent especially after being in a purge tank for a few days. Hopefully larger numbers are coming.

Purging crawfish is the process of cleaning live crawfish, typically by soaking them in water for 12–24 hours to remove mud and waste from their gills and digestive tracts. While often done with salt (known as a salt bath), this method is largely considered ineffective; fresh, aerated water is the preferred method to produce cleaner, higher-quality, and better-tasting crawfish.

The peak volume for my pond was mid May in 2025. Catch volume remained very good through July 4th week. At some point I have to drain and replant pond to rice for the next year.

The quality of these crawfish is excellent especially after being in a purge tank for a few days. Hopefully larger numbers are coming.

My Missouri crawfish are coming in slowly now but not in big enough numbers to count on yet. The size is large if given enough days for traps to sit between runs to allow small crawfish to grade out. The quality of these crawfish is excellent especially after being in a purge tank for a few days. Hopefully larger numbers are coming.

My traps are in the water now and we will be monitoring the catch for size and quantity. As soon as my crawfish are ready they will be available from the website.
