Co-owner and Head Chef Tim Maides once described his preferred lifestyle is akin to an old Italian nonna ... making sourdough bread and getting your hands in the garden. He takes that same aesthetic into his restaurant, not as a fabricated concept, but just because that approach just makes better food.
From a circular-foods and eco-friendly POV, here's what that looks like:
โ They source half of their ingredients domestically or locally, not because that gets you cool points. It's just where the best flavor comes from.
โ They make relationships with their local farmers, because nonna's are chatty
โ Sourdough crust is handmade using organic local grains
โ They have reusable dishware when dining in, because the dining experience is better
โ Digital menus to cut down on paper waste
โ All w**e bottles are recycled, including your typical recycled stuff, becuase nonna's don't waste anything
โ All food scraps are composted at our Soil Dynamics facility, because investing in local soil systems returns better food
And we can attest, our microbes love munching on any of the pizza crust y'all mistakenly leave on your plate. ๐คฃ
