Recipe for Slow Cooker Cowboy Casserole ⬇️🤠
This hearty crockpot dinner is loaded with seasoned ground beef, tender potatoes, pinto beans, corn, and plenty of melted cheddar cheese. It’s easy, comforting, and perfect for feeding a hungry family!
INGREDIENTS:
• 1 tbsp olive oil
• 1 lb lean ground beef
• 1 medium yellow onion, diced
• 1 red bell pepper, diced
• 3 garlic cloves, minced
• 2 tbsp tomato paste
• 1½ tbsp The Spice Girl Kitchen Okie Rub
• 1 tsp salt
• 1 (14.5-oz) can fire-roasted diced tomatoes, undrained
• 1 cup beef broth
• 1 (15-oz) can pinto beans, drained and rinsed
• 1 cup frozen corn
• 1½ lb Yukon Gold potatoes, cut into ½-inch cubes
• 2 cups freshly shredded sharp cheddar cheese
• 2 green onions, sliced
• Sour cream, optional
HOW TO MAKE IT:
1. Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it apart as it cooks.
2. Add the onion and bell pepper and cook for 4–5 minutes, until softened. Stir in the garlic and cook for 30 seconds.
3. Add the tomato paste, Okie Rub, and salt. Cook for 1 minute, stirring constantly, until the tomato paste darkens slightly and coats the beef.
4. Transfer the beef mixture to a 6-quart slow cooker.
5. Add the fire-roasted tomatoes, beef broth, pinto beans, corn, and potatoes. Stir everything together.
6. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the potatoes are fork-tender.
7. Sprinkle the cheddar cheese evenly over the top. Cover and cook for another 15–20 minutes, until melted.
8. Finish with sliced green onions and sour cream if desired!
