New coffee arrival from San Lazaro regenerative coffee farm in Honduras. Light, medium, and dark roast are now available online or at the farmers market.

San Lázaro Coffee is grown in the La Botija Mountains of southern Honduras, on a farm built around regeneration. All water used is rainwater harvested straight from the mountain, fertilizers are made on-site from compost and biochar, and 300 acres of surrounding forest are kept untouched to protect local wildlife. The farm is run by an all-woman workforce under a female manager, who receive fair wages, free healthcare, and education support for their families. It's coffee that gives back to the land and the people who grow it.

How I make coffee each day through pour over extraction.

Coffee grounds bloom in pour overs because the hot water triggers trapped carbon dioxide created during roasting to rapidly escape, causing the grounds of coffee to swell and bubble.

Coffee used: India Monsoon AA Dark Roast.
