Course One
Blue Crab Tostada
Avocado cream, charred pineapple and orange salsa, pickled jalapeño,
and micro cilantro
Paired With G4 Blanco - Cucumber, Jalapeno Tequila Cooler, Fresh lime juice, agave, muddled cucumbers & jalapeños. Served over ice and topped with club soda.
Course Two
Diver Scallop
Medican street corn (elote) puree, charred corn and poblano relish, cotija cheese and tan garnish, crispy proscuitto dust
Paired With LALO Blanco - Citrus Cilantro Spritz
Fresh lime juice, agave & grapefruit juice with muddled cilantro. Served over ice. Neat pour.
Course Three
Shrimp & Lobster Agnolotti
Shrimp mousse with pieces of lobster, brown butter and herbs, Veracruz sauce, basil oil
Paired With Adictivo Double Reposado - Guava Ginger Sour Lemon juice, guava nectar, ginger syrup, agave and bitters.
Served over a big rock.
Course Four
Chile & Espresso Braised Short Rib
Spanish rice with corn, peas and tomato, ancho demi-glace, black bean puree, cotija crumble and pickled red onion
Paired With Don Julio 1942 - Oaxacan Espresso Old Fashioned Fresh espresso, agave, mole bitters and orange bitters. Served over a large cube.
Dessert
Dulce de Leche Gelato
Paired With Patron XO Cafe - Midnight Madness
orange liqueur, coffee. Garnished with orange twist and cinnamon stick. Served up in a martini glass.
