Today at Justine’s Ice Cream Parlour, we take a moment to remember and celebrate someone who will always be part of our heart and history.
Tom Quimby, who owned Justine’s and was part of its soul for over 30 years, would have been celebrating his birthday today. Tom passed away in 2023, but his presence is still felt in every corner of the shop, in every scoop served, and in every memory shared by those who were lucky enough to know him.
Tom wasn’t just an owner—he was part of the soul of Justine’s. His kindness, dedication, and deep love for this place helped shape it into what it is today. Many of the traditions we hold dear, and the warmth people feel when they walk through our doors, carry a piece of him.
He was also the creative force behind the beloved “Famous Wall of Shakes.” Under his vision, Justine’s was featured in numerous national publications as one of the finest ice cream parlours in the United States.
Beyond the shop, Tom was widely known throughout the Mid-Shore and beyond for his incredible talent in acting and directing. He performed in and directed productions with the Tred Avon Players, the Annapolis Dinner Theatre, the Avalon Theatre, Anne Arundel Community College, and more than 20 productions with the Easton High School.
In the early 1990s, Tom served as Artistic Director of the Mid-Shore Center for the Performing Arts at the Avalon Theatre, and from 1991 to 2003 he was an adjunct professor at Anne Arundel Community College, where he taught Acting, Theatre History, and the Humanities.During that time, his creativity and encouragement touched the lives of countless young people.
On his birthday, we honor his memory with gratitude and love. We miss him dearly, but we continue to celebrate the legacy he built and the joy he brought to so many.
