🍖 ELITE CHEF CATERING PRESENTS: CARIBBEAN STEWED OXTAIL 🇯🇲🔥
This is tender, fall-off-the-bone oxtail slow-stewed in rich Caribbean brown gravy with green seasoning, thyme, peppers, carrots, celery, and deep island flavor. 🤤🌴
🛒 INGREDIENTS
🍖 Oxtail:• 4 lbs oxtail• ½ cup green seasoning• 6 sprigs thyme• ½ large onion• 1 plum tomato• 2 pimento peppers• Hot pepper to taste• 2 tsp salt
🔥 For Browning & Stew:• 2 tbsp vegetable oil• 4 tbsp brown sugar• 4 tbsp ketchup• 1 tsp allspice berries• 6 cups water
🥕 Vegetables:• 2 carrots• 4 celery stalks• ½ red bell pepper• 2 potatoes
Optional:• Butter beans
👨🏽🍳 STEP-BY-STEP DIRECTIONS
Wash the oxtail thoroughly with several changes of water, then drain well.
Season the oxtail with green seasoning, thyme, onion, tomato, pimento peppers, salt, and hot pepper.
Cover and marinate for several hours or overnight for deeper flavor.
Remove from the refrigerator and allow the oxtail to come to room temperature before cooking.
Heat vegetable oil in a large Dutch oven or heavy-bottomed pot over medium heat.
Add brown sugar and let it melt, bubble, froth, and darken until almost black.
Carefully add the seasoned oxtail along with any marinade liquid.
Stir continuously over high heat to coat and brown the meat well.
Cover the pot, reduce heat to low, and cook for about 1 hour until the liquid evaporates, stirring occasionally.
Continue stirring for another 2 minutes to deepen the flavor.
Add carrots, celery, red bell pepper, and allspice berries.
Pour in enough water to cover the oxtail.
Cover and simmer for another 1–2 hours until the oxtail becomes fall-apart tender.
Add extra water as needed while cooking to keep that rich gravy flowing.
Stir in ketchup and butter beans during the last 10–15 minutes if using.
Taste and adjust salt and pepper if needed.
Remove thyme sprigs and allspice berries before serving.
Serve hot with jasmine rice, rice and peas, mashed potatoes, or boiled provisions.
💡 PRO TIP: Browning the sugar until very dark before adding the meat gives Caribbean oxtail that signature deep color and bold island flavor!
