Today was a day to be creative with what is in season and on-hand as I develop the Summer Menu which will feature as our specials main salads and stir-fries.
Beets are in season now through the Fall. Golden Beet Salad with carrot, feta and toasted walnuts dressed in a Rose' Balsamic Dressing.
The asparagus is nearing its end for this year, but is still plentiful as are snap peas, basil, green onions and Romaine.
I created a chicken stir-fry with asparagus, green onions, celery, ginger, water chestnuts and a lemon sauce.
I tried fryjng green onions like onion rings. They were good, but next time I will use the same coating as I do for onion rings.
I used the tops of the green onions to make Basil, Green Onion and Pistachio Pesto which I used to dress a salad of romaine, grilled chicken and tomatoes.
