Today was a day to be creative with what is in season and on-hand as I develop the Summer Menu which will feature as our specials main salads and stir-fries.

Beets are in season now through the Fall. Golden Beet Salad with carrot, feta and toasted walnuts dressed in a Rose' Balsamic Dressing.

The asparagus is nearing its end for this year, but is still plentiful as are snap peas, basil, green onions and Romaine.

I created a chicken stir-fry with asparagus, green onions, celery, ginger, water chestnuts and a lemon sauce.

I tried fryjng green onions like onion rings. They were good, but next time I will use the same coating as I do for onion rings.

I used the tops of the green onions to make Basil, Green Onion and Pistachio Pesto which I used to dress a salad of romaine, grilled chicken and tomatoes.

Good things happen when one forgets.

I warmed some fresh, whole milk late on Friday and then forgot about it. On Saturday, after sitting at room temperature, a large mass had formed in the bowl. Intrigued, I put it in a strainer lined with cheesecloth. The mass crumbled into curds like cottage cheese! I added a little salt and, viola, cottage cheese -- or more like farmer's cheese because the curds are softer. It's easier than the recipe for Cottage Cheese in my book, "MillRose - A Century of Family, Farm and Food."

Our Dessert of the Week is Juneberry Cheesecake.

A pop-up special special this week is Chicken Blueberry Salad. (Dramatic actor reading the back cover of a book): crisp, sweet romaine and spinach swathed in Poppyseed Dressing with a salad of tender chicken, crunchy celery, onions and cucumbers enrobed in olive oil mayo, topped with shivered almonds and fresh, plump, organic, non-GMO blueberries.

Guests never know what may pop up at the Diner each day!

Today I made an Asparagus and Ham Omelet with Cheddar Sauce. Penny and Felicia enjoyed it for lunch. We sold all the asparagus today, so will not be able to offer it for Satursay and Sunday breakfast. Ask me to surprise you and be delighted by (hopefully) a new favorite.

Speaking of which, several have asked for our Penny (nee Patty) Melt. I will add it as a regular item to the Summer Menu, but decided to have some available beginning next week.

Garlic is one of my favorite seasonings. I have been growing two varieties for several years now. Garlic sends up long curly shoots with a flower bud at the end. I cut these garlic scapes before they straighten so the garlic bulbs can develop into large, plump specimens. I use the flower buds in stir fries, and the stems to make a Garlic Scape Pesto. It adds ZIP to our BLT. If you like garlic, I suggest you try it.

Blueberries, top, and Juneberries, bottom, are ripe and ready to harvest. We'll feature these fruits in our desserts and pastries while they last, beginning with Blueberry Coffeecake on Saturday and for Sunday breakfast.

I continue to develop recipes for our Summer Specials. I was making Lemon Chicken Stir-Fry with Lo Mein Noodles today when the Weishaar sisters (frequent and favorite guests) arrived, so I served it to them for lunch. It is Weishaar-sister approved with four thumbs up!! Stay tuned for our Summer Menu reveal in a couple of weeks 😋

Just finished making Beef with Spring Onion Stir-Fry when in walked one of our frequent (and favorite) guests who had it for lunch. Pop-ups are always so fun and rewarding! I need to record how I made it before I forget 😉

We also have Gooseberry Coffee Cake. Fresh Spring produce just shines in these two items!

We are scheduled to have maintenance on our ovens on Monday, June 1, so will be serving our regular menu items.

We will serve our weekly special Tuesday - Friday: Pulled Pork Sandwich, Baked Beans and Romaine Slaw.

In addition to Romaine, I harvested Spring onions, cilantro, mint, rhubarb and strawberries over the weekend. Our Dessert of the Week will be Strawberry Rhubarb Shortcake.
