Master Jung has seventeen years’ experience managing Japanese restaurant kitchens in the US. The 30-year-veteran, Sushi Master Jung has had only one goal in his career. His passion for providing better foods at more affordable prices has led an idea about the transformation of market sushi. What's POKE?

Poke /poʊˈkeɪ/ is a raw fish salad served as an appetizer in Hawaiian cuisine.
Pokē is the Hawaiian verb for "section" or "to slice or cut".
Traditional forms are aku (an oily tuna) and tako (octopus).
Increasingly popular ahi poke is generally made with yellowfin tuna.
Adaptations may feature raw salmon or various shellfish as a main ingredient served raw with the common "poke" seasonings.
