Chicken and Waffles is one of the great American dishes that finally got its due about a decade ago. Originating well over a HUNDRED years ago, there are still Americans that have never had it. Kind of like the Cuban Sandwich. It popped on the “cool” scene and every hot shot out there tried to do their “take”. But it’s the malted embrace of a buttery waffle and the sweet collateral damage of crunchy fried chicken bathed in syrup coming together that makes it one of the most satisfying experiences your mouth is ever gonna feel. Making it into a pizza wasn’t even necessary, but that’s kind of our thing. Smokehouse sauce, mozzarella, crunchy waffle crumbles and fried chicken topped with sweet & spicey Roscoe sauce. Pineapple, Banana Pepper Classico. I don’t know what was going on tonight, but you guys were on fire. There was a crazy chicken jalapeño pizza that got messed up and ended up being family pie. The build outs were wild. Beautiful pizzas, guys. Great job.

They thought school was out… But Smash summer training has just begun. I have no idea where any of the buttons are on the order screen, but they just drew the whole thing from memory. Just don’t ask them the difference between a nickel and a dime, this is a whole new generation. Sigh. Doors are open! See you guys soon!

It feels like summer’s been here a month already, but it’s just getting started. May-June are probably our biggest transitional months at the shop. New hires, staff vacations, “retirements”, it’s always a little hectic. The summer slow down starts for the next eight weeks, people start hitting concerts, baseball games, patios, bar patios, yard work, family trips,etc…But it does give a little time to work on some new things. First, the Chicken Robbie will make its way to the Signatures soon. It seems to have a little bit of a following. And ONE last batch of Guapo, I caved to the pressure. But we need room, because we’re rolling out a summer sauce. We get phone calls all the time asking, but we’ve never made a white pizza. It’s a very specific thing in pizza culture and I wanted to make sure we got the flavor profile right. Perfect for summer: olive oil, ricotta & Parmesan cheeses, with garlic, fresh herbs & tangy lemon vinaigrette. Have it plain or add your favorite toppings. The White Pie is finally here! Chen’s last day. He thinks that’s why I got him Dairy Grove but really I just wanted to get out of doing dishes.

Hopefully he comes back after his summer internship, working his family’s restaurant (Wonton Gourmet BBQ in Cle, it’s amazing) and studying for his nuclear physics classes. Not sure why he can’t fit in making pizzas, but that’s kids these days. No grit.
