Armadillo Eggs?! But they’re not eggs and not from an armadillo….?
The name of this Texas-originated dish raises eyebrows in our restaurant almost every day for those not familiar, but once people give it a chance, they are fans for life.
Our armadillo eggs are traditional fresh jalapeños, grill and stuffed with cream cheese, wrapped in our sausage and cheese breading, baked until golden and crispy. But we include our signature blackberry cream sauce, which adds a delicious balance to the whole dish.
