For national Gumbo Day here is an easy slow cooker recipe

🔥 EASY SLOW COOKER GUMBO 🔥
Who says you have to spend hours over the stove to make a great gumbo? 🥄✨ This set-it-and-forget-it slow cooker version is packed with deep Cajun and Creole flavor.
Ingredients:
• 2 lbs chicken thighs (boneless, skinless)
• 8 oz andouille sausage, sliced into rounds
• 1 lb shrimp or mixed seafood (add at the end)
• 1 bell pepper, diced
• 1/2 cup onion, diced
• 2 celery stalks, sliced
• 2 garlic cloves, minced
• 1 cup frozen or fresh okra
• 6 oz tomato paste
• 15 oz can diced tomatoes
• 4 tsp Cajun or Creole seasoning
• 1/2 tsp cayenne pepper (adjust to spice preference)
• 1/2 tsp dried thyme & 1/2 tsp dried oregano
• 1 bay leaf
• 1/2 cup low-sodium chicken broth
Instructions:
1. Combine: Add the chicken thighs, andouille sausage, bell pepper, onion, celery, garlic, okra, tomato paste, diced tomatoes, spices, bay leaf, and chicken broth into your slow cooker. Stir well.
2. Slow Cook: Cover and cook on HIGH for 2–3 hours or LOW for 4–6 hours until the chicken is tender.
3. Shred & Seafood: Shred the chicken right in the pot (or pull it out to shred and return). Stir in your shrimp/seafood during the last 20–30 minutes until pink and cooked through.
4. Serve: Discard the bay leaf. Serve hot over a bed of fluffy white rice with a sprinkle of green onions or parsley!
