This is one of the hardest posts I’ve had to write.
As many of you know, I’m currently going through a divorce. Between navigating that, working my full-time job, and running Just In Case, it’s become more than I can realistically manage.
So, with a heavy heart, I’ve made the difficult decision to put Just In Case on hiatus. We plan to reopen after my move to Tucson.
To my North Bend customers—you took a chance on me when all I offered were my little meatless lunches. 🤭 You believed in me, supported me, and helped turn a simple idea into something so much bigger than I ever imagined.
To our friends in Schuyler, Fremont, and Omaha—thank you for every order, every kind word, every share, and every bit of encouragement. You made this journey unforgettable.
This isn’t goodbye—it’s simply “see you later.”
From the bottom of my heart, thank you, Nebraska, for supporting my dream. I can’t wait to see what the next chapter brings.
