Concession event over the weekend... a couple stopped at our menu board & looked it over. One said to the other . "Let's go back to the other truck the prices are higher, bet the food will be better"
Sayyyyy what? Really didn't know it works that way.... 🤔
As a Concessionair I'm eager & more than willing to try others foods and let me tell ya I've had some expensive crappy food that's for sure. Be it a food truck or brick & morter. Price does not delegate quality food at a fair price.

Settled on menu items for the second trailer. I do believe it will be simple ole tyme concessions, such as rootbeer floats, ice cream, hotdogs, popcorn & peanuts. Keep it simple & easy. Could be something Doreen & I can do in our old age, cause it sure isn't getting any easier lugging cases of meat around thats for sure. 😉
We'll keep ya all posted on build progress as time goes. I did manage to hang a few pieces of wall panels in the little trailer on Sunday.
The 6x10 white supply trailer should be big enough for two workers, a small 4 compartment sink, the ice cream cabinet, a small fridge, popcorn machine, hotdog roller & the peanut warmer. Might even be able to stuff a portable AC unit in there too.... LOL

Cured & cold smoked a couple small slabs (6lbs each) of bacon yesterday afternoon. Cut them into half strips & vac sealed. In the freezer they went. Had a bit of trouble with the saltiness but after a 20 minute cold water soak they ended up perfect. Dusted with Cajun Seasoning before smoking & was just too salty for us. That fixed it though. No loss of flavor. Live and learn. If make'n bacon was easy everyone would be do'n it. But hey the tuffest part is waiting 10 days while it cures.
14 packages of 4-6-8 & 10 pc. half strips. Cause some days ya want a little & some days ya want a lot. 😎
Should last us till we need more... LOL

Nuther Friday afternoon off soooo....

Time for a little cold smoked CAJUN BACON!
Seasoned & cured with Hi Mountain brand black pepper & brown sugar blend.
Rinsed & dried. Re-seasoned with cajun spice & red pepper flakes for wee bit of that cajun bayou kick. Not really sure what classifies it as "cajun" but thats what i call it. And well the seasoning bottle did say... "cajun spice" (LOL) Hung em up in the cold smoker with hickory & oak pellet blend for smoke flavor.
Shooting for at least 9 - 12hrs, Might take it off then & run another 9 hours tomorrow. We'll see. One way or the other it should be good!
