My current favorite entrée on our menu is FAROE ISLANDS SALMON with crispy skin, served over fish soup inspired by our recent travels.
While on a trip to Iceland and the Faroe Islands, Chef and I had an incredible opportunity to visit Hiddenfjord, the company that raises the salmon we serve at the Bistro.
We experienced genuine hospitality as Sveinur graciously hosted us at their headquarters - on a Sunday. He shared the history of the company, led by two brothers who are committed not only to a high quality product, but also sustainable and ethical practices. While the offices and processing areas were quiet on the weekend, workers in boats visit the pens to check on and feed the fish daily, and we had the honor of getting to join them on the water.
Extreme care is taken with these salmon, and scientific research backs every decision - from how much to feed each pen to the process of bringing the fish in for harvest to the way each fish is hand-cleaned & packed for shipping. Extra measures are taken to ensure the fish are healthy & stress-free for their entire lives, and the process of harvesting, cleaning and packing each fish is accomplished in just 3 hours, keeping the fish fresh for the journey to us. In 2020, Hiddenfjord moved from shipping by plane to only using boats and trucks, effectively lowering their carbon footprint by 70 percent.
After returning to shore, we enjoyed a delicious fish soup for lunch at Fiskastykkið - recommended by our new friend Sveinur - which inspired this dish on our menu. It's creamy but still light, rich in flavor and texture, and pairs beautifully with the buttery salmon raised in the wild waters of the North Atlantic Ocean.
Reservations are recommended at our little Bistro - our 9 tables / 35 seats fill up fast - and we encourage you to call ahead to check for last minute openings!
