UPDATE: Ya’ll like egg salad more than we expected. LOL. We sold out of this batch, so for tomorrow (6/20) we made some more traditional egg salad since we we’re out of snap peas. Come grab one while they last!
Tokyo Meets Indiana
What does a Tokyo 7-Eleven and an Indiana produce farm have in common?
Maybe nothing at all, except for this week’s sandwich special. 🤣
A few weeks ago, our family spent time in Tokyo, where we ate more than our fair share of the city’s famous convenience store egg salad sandwiches. Soft, pillowy bread. Creamy egg salad. Simple, comforting, and somehow better than they had any right to be.
At the same time, we were missing one of our favorite signs of spring back home: the brief snap pea season at Full Hand Farm. So when Genesis texted after we returned and said, “I do have a surprise pick of sugar snaps available this week too if you’re interested,” we immediately said yes.
Then, somehow the snap pea and 7-Eleven synapses in Rocky’s brain connected.
The result is our Snap Pea Egg Salad Sandwich: local snap peas from Full Hand Farm folded into a Japanese-inspired egg salad with cucumber, chives, Kewpie mayonnaise, and a touch of rice vinegar, served on house-made Japanese milk bread.
Available this Friday and Saturday (6/18 & 6/19) while supplies last!
And the bread deserves its own mention. Jess hadn’t made milk bread in years, yet somehow whipped up the perfect loaves—an incredibly soft, delicate bread that happens to be the ideal home for this style of sandwich.
Part Tokyo convenience store. Part Indiana spring harvest. Completely delicious.
