Resting beans & why we recommend it! Coffee beans release CO2 after roasting and need significant time to de-gas before brewing. If coffee is not properly rested, excess gasses can cause inconsistencies while brewing and lend to a pretty bad tasting cup of coffee. For filter coffee we recommend resting beans anywhere from 1-4 weeks to reach its peak flavor. When it comes to pressurized brewing like espresso, there is no where for gas to escape to like there is for regular filter coffee, so resting becomes more important. In today’s coffee world, resting espresso longer than filter coffee has almost become universal. Storage conditions will also affect how your coffee ages - vacuum sealed in the freezer will almost halt the aging process, in contrast to storage warmer conditions degrading the coffee much faster. When shopping for beans keep in mind the roast date and when you plan on brewing, and for best results make sure your coffee is rested!
