The days are getting cooler, which means it’s officially time for Chashushuli and Chaqapuli. Two Georgian veal stews, each with its own character: Chashushuli is rich and tomato-based, while Chaqapuli is bright with tarragon, white w**e, and sour plum. Both warm, comforting, and just right for this time of year.

Georgia has so many great w**emakers that choosing favorites is almost impossible. Anemo is one we’ve loved for a while, and right now we’re pouring their Alexandrouli–Mujuretuli from Racha at Laliko. What we love just as much is seeing Georgian w**e becoming such a natural part of New York — showing up on great w**e lists around the city and finding a real audience here. New Yorkers really get Georgian w**e, and it’s so cool!

… about ten minutes later, Ilia Topuria walked in.
A couple of months ago, he drove past Laliko, rolled down the window to chat with our chefs, and promised he’d come back. Yesterday, he kept his word. He walked in, sat down, played cards with the team, and for sure had some khinkali before leaving.
Ilia, thank you for keeping your word. Our whole team was thrilled to have you Laliko , and you’ll always have a seat at our table, you know.

What a day yesterday turned out to be. Daniel Radcliffe joined one of our Airbnb Experiences x chefstableofficial Supra with friends, and they couldn’t have been more curious about Georgian food. Daniel wanted to know the stories behind the dishes, learned how to eat khinkali, and was happy to try just about everything we brought to our Supra. As much as he loved the khinkali, the undisputed favorite turned out to be our Chicken Shkmeruli. And that wasn’t even the end of the evening...

Ever wonder why there are only two khinkali on the plate?

Because after everything else in our Hangover Set, two is honestly about as many as you can handle. The set comes with a huge bowl of rich, collagen-packed hash soup, a shot of chacha, pickles, freshly baked bread, and these two beautiful khinkali. So if you have serious plans for Friday night, you might want to make equally serious plans for Saturday brunch at Laliko.

Asparagus doesn’t usually get much attention, but it deserves a little moment this time of year. Ours is finished with fragrant Svan salt and bright pomegranate seeds — exactly the kind of dish we find ourselves craving while hot fall is still hanging around.
