PRESHIFT IS MORE THAN JUST THE PREP.

For me, it’s about building the people behind the food.

It’s about creating chemistry, building trust, having a little fun, and making sure my team understands that culture is just as important as ex*****on.

Sometimes that means talking through service.

Sometimes it means coaching.

Sometimes… you just have to hit the Hotel Lobby with your Jr Sous. 😂😂

I’m big on creating an environment where my team can work hard, learn, laugh, and grow together.

Because I don’t just want cooks in my kitchen.

I want to build chefs.

Consistency & Passion.

No Ego. Just Ex*****on.

THE CONCRETE JUNGLE 🌆🥃

Brooklyn raised me on late nights, loud blocks, good music, and Long Island Iced Teas.

The Concrete Jungle is my grown-man version of that experience.

Rye wh***ey. Dark rum. Amaro. Lime. Demerara. Red w**e. Bitters.

It’s got swag.
It’s balanced.
It’s layered.

And make no mistake—it packs a punch.
Familiar roots. Different route.

A nod to where we came from, reworked for where we are now.
THE CONCRETE JUNGLE

Bold enough for the city. Smooth enough to sip slow.

YOUR RESTAURANT DOESN’T NEED MORE MENU ITEMS.

IT NEEDS A MENU THAT WORKS.

A menu should tell your story, work within your kitchen, maximize what you already have, and give your team the systems to execute consistently.

That’s the philosophy behind MENU LAB by Roots & Routes.

I’m helping independent restaurants turn their ideas into focused, functional, and executable food programs.

Menu Development.
Recipe Development.
Kitchen Strategy.

If your menu needs more than just more items…

DM “MENU LAB.”

Let’s build something that works.

HOT HONEY FRIED CHICKEN 🔥🍯

Golden. Crispy. Juicy.

A Southern classic with a New York route.

Crispy chicken cutlet, tossed in our house-made hot honey — sweet up front, heat on the finish.

Served with mixed greens and warm cornbread because the plate needs balance.

This is Southern comfort with NYC attitude.

No shortcuts.
No gimmicks.
Just intentional food, built with purpose.

Every Plate Tells a Story.

JERK BBQ WINGS. BIG ENERGY. 🔥

Jerk spice. Smoke. Sweet heat.
Charred, glazed, sticky, and unapologetic.

Southern soul meets Caribbean fire —
then we take that flavor straight through New York.

This is how we do wings at Roots & Routes.

Bold flavors. Built for hustle.
Every Plate Tells a Story.

HERB & HUSTLE.

I created this one with intention.

Gin. Fresh lemon. Cucumber water. Basil.
A touch of honey. A few orange bitters.

Bright. Fresh. Botanical.
But there’s nothing accidental about it.

Every element was chosen for a reason.
Every flavor has a job.
Every shake has intention.

This is what I mean when I talk about cooking behind the bar.

Creating something that looks beautiful is one thing.

Creating something that tastes like a thought is another.

The pretty part is easy.
The hustle is in the details.

FRIED FISH. NEW YORK ATTITUDE.

Crispy beer-battered cod.
House slaw.
Caribbean tartar.
Soft bun. Big flavor.

A little Southern comfort.
A little Caribbean soul.
A whole lotta New York.

This ain’t your average fish sandwich.

Familiar flavors. Unexpected routes.

Every Plate Tells a Story.
Every Sip Moves the Rhythm.

This ain’t a side. This is the whole conversation.

24 pieces of fried goodness.
Cod fritters. Hushpuppies. Cajun fried shrimp. Wings.

And 6 house sauces to take every bite in a different direction.

Southern roots. Caribbean influence.
New York appetite.

Built to hit the table, get passed around, and probably disappear before everybody gets their first piece.

THE FRYBASKET.

Big flavor. Built to share.

Every Plate Tells a Story.
Every Sip Moves the Rhythm.
