I regret I ever came across this recipe. I brought it to a work potluck a while back and now everyone insists that
I bring it every time! I think I'm on the hook for good.Ingredients:
For the filling: Fresh spinach, feta cheese, onions (or green onions), garlic, eggs, herbs (dill, parsley, mint, oregano), lemon zest, nutmeg.
For the pastry: Phyllo dough (or puff pastry), melted butter or olive oil.
Instructions:
1. Prepare the filling:
Sauté onions, green onions, and garlic. Add spinach and herbs, cooking until the spinach wilts and excess liquid evaporates. Let cool, then mix with crumbled feta cheese, beaten eggs, lemon zest, and nutmeg.
2. Assemble the pie:
Layer sheets of phyllo dough in a baking pan, brushing each layer with melted butter or olive oil. Spread the spinach and cheese mixture evenly over the phyllo layers. Top with more buttered phyllo layers.
3. Bake:
Bake in a preheated oven (around 350°F or 175°C) until golden brown and crispy.
