Recipe: Blackstrap Steak Rub- Serves 2
The rub:
-ยฝ cup Blackstrap Blend, ground medium-coarse
-ยผ cup brown sugar
-2 tbsp smoked paprika
-1 tbsp salt
-1 tbsp garlic powder
-1 tsp ground cumin
-1 tsp cinnamon
-ยฝ tsp cayenne pepper
Instructions:
Mix together all dry ingredients. Pat your ribeyes dry, press the rub generously onto both sides, nd let the steaks sit at room temperature for 30โ45 minutes. Grill over high heat, 3 to 4 minutes per side for medium-rare. The coffee crust will char and that's exactly what you want. Rest for 5 minutes before slicing.
Roaster's note: Grind the Blackstrap medium-coarse, not espresso fine. You want texture in that crust. If you're grinding at home, go one step coarser than your pour-over setting.
