Vegan lovers, we have not forgotten about you. Our roasted cauliflower lentil empanadas are inspired by a Jackson Heights staple… the Samosa! Our version however does not include potato, we substitute roasted cauliflower and mix in some cooked red lentils along with a spice mixture, onions, peas carrots and fresh cilantro. It pairs lovely with our salsa verde
