In honor of what would have been Chef Paul Bocuse’s 100th birthday on February 11th we will be preparing our interpretation of his lobster salad a la française. A new addition to the lunch menu - Tuna Arayes

Middle Eastern–inspired Tuna Arayes, prepared using tuna grinded with wagyu beef fat, herbs, and spices, then griddled until crisp. Served with fries, a bright Persian cucumber salad, and finished with pomegranate harissa ketchup, tahini, and garlic sauce.
