It’s Monday and we’re opening up a magnum of pure, concentrated, impeccable Oregon Pinot:

Cameron Pinot Noir Abbey Ridge Dundee Hills 2021

After earning a PhD in Marine Biology in the mid-70s, John Paul Cameron chucked it all and went to work in a California vineyard for $5 an hour. After a stint as the assistant winemaker at Carneros Creek in Napa Valley, he purchased a vineyard in the Dundee Hills within Oregon’s Willamette Valley. Today, his wines are as much an expression of his irrepressible personality as they are the Dundee Hills terroir he champions.

As a new year begins, it feels like a good time to introduce the team members that will be taking care of you in 2024. We begin with four questions for our Executive Chef Jorge Luis Pabón, who grew up in Puerto Rico, studied philosophy, and now runs our kitchen at 47 East Houston Street.

Today by the glass starting at 5:30, it’s a crystalline Riesling from the Pfalz:

Brand Weingut Riesling ‘Pur’ 2018

The young Brand Brothers have brought attention to this cool-climate, limestone-rich, traditionally overlooked region. As our friends at Vom Boden point out, they have quietly experimented with zero sulfur winemaking. Some of their expressions were close to perfect from the start. Join us to have a glimpse at these captivating wines by the glass, from a magnum of a vintage from the year the estate was designated as certified organic

This week’s Monday Magnum? A very proper Bordeaux. We’ll start pouring glasses at 5PM.

Closerie du Pelan Côtes de Bordeaux 1999

Its vibrant fruit, its foregrounding of savory mineral elements, and its absence of flash and flab: it’s the old, true, haunting style of Bordeaux that made the region famous, yet which is so rare to encounter these days.

This Monday, December 4th, join us for a BTG magnum that’s not to be missed, a stunning Pinot Noir from the Côte de Nuits:

Domaine Jean Chauvenet Nuits-Saint-Georges 2018

Since 1994, Christophe and Christine Drag have ushered in a new era for the storied Chauvenet domaine, veering away from chemical treatments and embracing a natural approach. The Nuits-Saint-Georges village appellation represents the bulk of the holdings, more or less seven hectares of vineyards spread across several parcels principally located in the northern reaches of the village, on a combination of silt, sand, and gravel soils, which produce a classic and elegant expression of the appellation

The cozy holiday feeling continues this evening with our latest Monday Magnum, a beautiful red from Burgenland offered by the glass:

Gut Oggau Blaufränkisch ‘Josephine’ 2018

Bright yet autumnal, this blend of Blaufränkisch and Rösler is another marvel from Stephanie and Eduard Tscheppe. 35-year-old vines on limestone soil. Eight months in oak. Unfined, unfiltered, with zero added sulphur.

We open the bottle at 5PM.
