We prioritize safe ingredients we would feel comfortable to feed our children, what does that mean?

NO BROMATED FLOUR
Potassium bromate is a flour treatment agent used to strengthen dough and improve rise. It’s classified by IARC as possibly carcinogenic to humans, based largely on evidence of cancer in experimental animals.

NO CORN SYRUP
Corn syrup is an added sugar made from corn starch. Added sugars aren’t inherently “toxic,” and the FDA says high-fructose corn syrup has not been shown to be less safe than comparable amounts of other common sugars. Other bagel shops use ingredients with 80% + corn syrup, ours is 100% malt. We simply don’t think our bagels need it.

NO ADDED STABILIZERS
Stabilizers, gums and texturizers are often used to create consistency, improve texture or help processed foods maintain their characteristics. We choose to get our bagel’s texture the old-fashioned way: through our ingredients and process.
