Beshbarmaq — a traditional Kazakh and Kyrgyz dish — literally means “five fingers,” because it is traditionally eaten by hand.

And there may be more behind that tradition than meets the eye. Feeling the temperature and texture of food with your fingertips adds another sensory signal before you even take a bite. Together with sight, smell and taste, these signals help your brain anticipate the meal and prepare your digestive system for the food that’s coming.

For nomadic communities, food traditions were shaped by life on the steppe, where meat and fermented dairy products played an important role in the diet.

What looks simple today carries generations of nomadic culture and wisdom. Sometimes tradition knew what worked long before modern science could explain the connection between our senses, brain and digestion. ✨
