Ingredients
3 eggs (beaten at room temperature)
1 cup sugar
1/2 cup yogurt
1/2 cup vegetable oil
2.5 cups flour
1 packet baking powder
1 packet vanilla

Set your oven to 170°C. Grease a cake pan well with butter or shortening as shown in the picture and lightly flour it (shake off excess flour so the cake doesn't stick).
In a deep bowl, beat the eggs and sugar with a mixer for about 4-5 minutes until the mixture turns white and frothy. This is the most important step for a spongy cake.
Add the yogurt and vegetable oil. After this step, mix briefly on low speed with the mixer or continue with a spatula.
Sift the flour, baking powder, and vanilla into the mixture using a sieve. Gently mix from bottom to top with a spatula without deflating the batter.
Pour the cake batter into the pan. Tap the pan on the counter once or twice to remove air bubbles. Bake in a preheated oven for approximately 35-40 minutes.
Tip: Never open the oven door for the first 20 minutes. You can check if it's done by using a toothpick.
Serving: After the cake is baked, remove it from the oven and let it cool in the pan for 10-15 minutes. It may crumble if you try to remove it before it's completely cool.
