Watch Chef Christopher Vazquez bury a swordfish in grated beets — and trust me, you want to see where this goes.

It starts with his own house-made spice blend — juniper, cumin, coriander, and a bright hit of grapefruit and citrus zest. He rubs the fish down, lets it rest, then packs it in freshly grated beets and walks away. 48 hours later the beets have stained the flesh a deep ruby and turned the swordfish into something firmer, brighter, completely transformed.

The result is astonishing.

Father’s Day Brunch at Ralph’s on the Park, Sunday, June 21. Three courses for $65, served from 10:30 AM to 3:00 PM with City Park outside the window. Bananas Foster Dutch Baby. Coffee-rubbed pork belly. Slow-braised lamb shank, or pan-roasted filet if he’s feeling it. Strawberry doberge to finish.

The Duckhorn Vineyards 50th Anniversary Wine Dinner — Wednesday, June 10 at Ralph’s on the Park.

Four courses from our kitchen, five wines from their vineyards, in celebration of half a century of one of California’s most storied wineries. Part of the 2026 New Orleans Wine & Food Experience.

Reception begins at 6:30 with caviar & cornbread, hand-passed beneath the oaks. At 7:00, we sit down to beet cured swordfish, blackened foie gras, Cajun spiced beef tenderloin, and chocolate marquise — each paired with a Duckhorn wine, from the Goldeneye Brut Rosé to the 3 Palms Vineyard Merlot.

The 3 Appetizers + Glass of Wine is back — and if you know, you know🍷

New Orleans has a soft spot for this one, and we’ve made it summer’s best argument for ordering three small plates instead of one big entrée. Pick any 3 from a menu of 15 summer-exclusive dishes, add a glass of featured wine, and settle in. $39.

A few we’re especially proud of this season: Crawfish & Summer Truffle Radiatori, Beet Cured Swordfish with Melon and Dukkah, White Cornmeal Fried Oysters over Bacon Jam, Golden Gazpacho with Louisiana Crab — and our signature Turtle Soup, with sherry.

The park’s never looked better. Come make an evening of it.

This one’s named in her honor.

The Singing Oak — Whiskey Tree Bourbon, housemade strawberry oleo, a whisper of Fee Brothers plum bitters. Bright, jammy, with just enough wild around the edges.
