Cheesecake Fruit Salad with Caramel Drizzle

A delightful combination of fresh fruit, crunchy graham cracker crumble, and luscious caramel sauce—this cheesecake-inspired fruit salad is the perfect sweet treat for any occasion!

Ingredients:

2 cups strawberries, hulled and halved

2 cups green apples, cored and diced

1 cup red grapes, halved

1 cup granola or crushed graham crackers

1 cup caramel sauce (store-bought or homemade)

For the Cheesecake Filling:

8 ounces cream cheese, softened

¼ cup powdered sugar

½ teaspoon vanilla extract

½ cup whipped topping (or homemade whipped cream)

Directions:

Prepare the Cheesecake Filling: In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Fold in the whipped topping until well combined.

Assemble the Fruit Salad: In a large mixing bowl, gently toss the strawberries, green apples, and red grapes.

Layer the Salad: Spread half of the fruit mixture into a serving dish or aluminum pan. Spoon half of the cheesecake filling over the fruit. Repeat with the remaining fruit and cheesecake filling, gently spreading the filling to cover.

Add the Toppings: Sprinkle granola or crushed graham crackers evenly over the top. Drizzle generously with caramel sauce.

Baked Cauliflower Tastes Better Than Meat! Crispy Roasted Cauliflower

Ingredients:

1 large head of cauliflower (approximately 2 lbs), cut into florets

2 tablespoons olive oil

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

1/4 teaspoon salt

1/4 teaspoon black pepper

Optional: 1/4 cup grated hard cheese

Directions:

Preheat oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Prepare cauliflower: Wash and thoroughly dry the cauliflower florets. Cut large florets into smaller, more evenly sized pieces for consistent cooking.

Season cauliflower: In a large bowl, toss the cauliflower florets with olive oil, garlic powder, onion powder, paprika, salt, and pepper until all florets are evenly coated. If using hard cheese, add it to the bowl and toss to combine.

Roast cauliflower: Spread the seasoned cauliflower in a single layer on the prepared baking sheet. Roast for 30-40 minutes, or until the cauliflower is golden brown and tender, flipping halfway through for even browning.

Serve: Remove the cauliflower from the oven and let it cool slightly before serving. Enjoy as a main dish, side dish, or snack!
