My mom did not let a single grain of broken rice leave that kitchen. Not once.
Most people never think about the rice. They focus on the curry, the spices, the sauce. But in an Indian meal, the rice is the foundation. And if it is wrong, the whole plate is off.
We spent months testing basmati brands before we found one we trusted. And even then, the brand is only half of it. She washes it to remove the starch, boils it on the stove with water and a little oil, and drains it by hand. No shortcuts. No rice cooker. Every single day.
That level of detail is what separates a good Indian meal from one you cannot stop thinking about.
