A local taco truck in New Braunfels is doing a lot more than just serving great food.

Tacos Papi Grande has grown into a nonprofit with a mission to support single parents in the community. After stepping in to keep the business going, Amber Gunn turned it into an all-women-run operation that now gives back in a meaningful way.

Amber, who also works full-time in real estate, originally founded a nonprofit to help single parents thrive. Today, that mission is tied directly into the taco truck, with partnerships alongside local organizations like the Crisis Center of Comal County to provide food and financial support.

What started as a small passion project has turned into a community-driven effort where every taco sold helps make a difference.

Five years ago today, on a golf cart in Port Aransas with our speaker blasting Big Poppa, I jokingly sang, “I love it when you call me Papi Grande.” Just like that, a dream got its name. What started as a food truck became a nonprofit, a catering business, and a community we love beyond words. Luis, thank you for helping me discover parts of myself I never knew existed. We’re grateful for how far we’ve come and excited for what’s next. In Jesus’ name, Amen. ❤️🌮

This Sunday at 7:30 AM, Tacos Papi Grande and Lock & Load Seasoning will be featured on FOX Austin’s Good Day Cooks!

A few years ago, I couldn’t cook. I grew up in a house where cooking wasn’t really a thing, and honestly, I never wanted to eat anything I made. My accounting brain wanted everything to be a formula.

Now here I am… an all-girl taco truck owner, creator of a birria seasoning kit, and somehow teaching people how to make birria on TV.

If this blonde, green-eyed “Birria Barbie” can learn to make authentic birria, anybody can.

Tune in Sunday morning and see how a nonprofit food truck from New Braunfels turned a simple taco into something much bigger.
