"The plan was music."

Who are you?

"I'm the epitome of a melting pot of Louisiana's gumbo. I do music. I do food. I went to school for electrical. I like to play hard with my trucks. Kind of everything."

Born in Natchitoches, Chris or ‘CC’ if you know him, spent much of his childhood bouncing between Natchitoches, Lake Charles, Baton Rouge, and Sulphur before eventually returning home for good in 2010.

"Kind of done the little triangle of love bouncing around."

Long before he was running a kitchen, he was working in one.
"My first restaurant job was sixth grade. Mr. Zumo's Hot Tamales and Snow Cones in Baton Rouge."

And even before that:
"I've been doing that since I was probably in the third or fourth grade."

Was food always the plan?

"Nope."

"The plan was music."

"I really thought I was going to make it."

Chris spent years chasing that dream.

Playing shows.
Recording.
Touring.

Meeting musicians he had admired for years.

Looking back, there's no bitterness in his voice.

"It was all great because even though nothing happened from it, I got great stories."

Then came a conversation with Clay Mayeaux.

At the time, Chris was working at his family's pawn shop. Clay mentioned he was thinking about opening a restaurant.

Chris went home and built a menu.
The next day he brought it back.

Years later, much of what he wrote that night is still being served.
When I asked how he ended up here, he gave one of my favorite answers from this entire project:

"The music brought me to food."

What keeps you doing it?

"People."

Then he thought about it a little more.

"You can make people happy with food."

And then maybe the most honest answer of the afternoon:

"Making people happy makes me happy."

What does Natchitoches mean to you?

"It's definitely a melting pot."

Chris talked about growing up around different cultures, different families, different traditions, and how those experiences shaped the way he sees people and the way he cooks.

For him, Natchitoches isn't just a place.

It's people.

Stories.
Food.
Music.
Community.

One of his favorite memories is a story that sounds almost too strange to be true.

As a kid spending summers near the river, he believes he may have spent an entire summer playing with a young Reese Witherspoon while 'The Man in the Moon' was being filmed in
Natchitoches.

"Pretty sure I played with Reese Witherspoon one whole summer when they filmed that movie or maybe I created a false memory."

What do you miss about the old Natchitoches?

"Christmas Festival. What it used to be."

He remembers cardboard sleds on the riverbank.

The fireworks.
The boats.
Kids running free downtown.

A version of the city that felt a little simpler.
How has Natchitoches shaped you?

"It's grounded me."

The music.
The restaurant.
The successes.
The failures.
The lessons.

All of it.

Years from now, what do you hope people remember?
"I hope they remember we did a good job."

And then, almost like a life philosophy:
"Just try your best."
