Last weekend Audrey hosted the Michelinman Dinner Party with . Thirteen courses paired to a full concept album, one dish per track, from start to finish. Here is what Chef Sam Jett had to say about the night.
"Thirteen tracks sequenced like courses, each one a distinct moment in a longer arc. The music sits in a quiet, jazz-inflected space with sparse piano and low-tempo beats, a patience to it that rewards attention the same way a long dinner does.
We listened for density and where each song sat along that spectrum, how much space lived inside the production, how much weight. Those qualities told us what each plate needed to be. How full or restrained, how sharp or soft, how much the ingredients needed to recede or assert themselves.
Pitch informed brightness and sparse arrangements called for restraint on the plate. When the drums hit hard we built in something unexpected, and the voice, low and unhurried, told us how much salt and depth each bite needed.
The result was one of the more honest evenings we've had in that room, and the team understood the assignment completely."
