Twenty years ago this month, a little Greek pastry stand opened at the farmers markets in Colorado. The sign was made out of construction paper. The tables, plastic shelving and PVC pipe.

There was no “we“ in those first eight years - confidence, ignorance, and self-doubt went hand in hand. There were a lot of tears, late nights, and sometimes no nights. There was also (a LOT) of bartering - from tamales to mountain lodging, a lot of good people wanted to help a stranger achieve her dream.

At the time, I thought perseverance was the result of chasing a dream. Looking back, it was the friendships and relationships that were formed from those markets that kept me going.

To everyone who believed in me during those formative years – – THANK YOU. A six year old girl who just wanted to play “restaurant” her entire life, happened to get lucky as she got older because of you.

As jajabelles grew, you grew with us. And the belief you had in me, you transferred to my staff on Main St. I didn’t create the jajabelles community you know today - our staff and customers did.

I just provided the dream and (finally) upgraded the sign.

Orthodox Easter is Sunday, April 12! 🐣 Baklava, kourambiethes, finikia, koulourakia, and kataifi will be available starting Wednesday. Pre-order your Dolmathes, Tsoureki, Spanakopita, and Tiropita by the 8th for weekend pickup.

For the first eight years of the business, jajabelles’s only product was Greek pastries, all learned from the Makris sisters from 25 Vine St. in Nashua. At Easter and Christmas, we go back to honoring our original roots by baking all of the pastries.

Whether you celebrate Orthodox Easter or not, if you love Greek pastries, now is the week to visit us.
