Did you know that most wasabi you've eaten might not be actual wasabi?
A lot of "wasabi" out there is actually a blend of horseradish, mustard powder, and green food coloring. Real wasabi doesn't have the aggressive sinus-clearing burn; instead, the spiciness in freshly-grated wasabi fades quickly, and is meant to be subtle and fleeting, leaving a sweet and herbal flavor behind that's the perfect complement to sushi, sashimi, and other Japanese flavors.
