Two days, start to finish.

Our house focaccia is made in-house with 100% Italian durum wheat, water, yeast, and salt. No regular wheat flour. After a two-day fermentation, it’s dusted with semolina and Maldon sea salt, then baked at high heat for a deeply crisp exterior and soft, airy center.

Finished on the grill for another layer of char.

Served alongside our whipped ricotta, mussels, and throughout the menu. Not just the bread on the side, but a part of the dish.
