In Louisiana, boudin is a spicy, rice-based sausage, often called a “Cajun sausage”. It’s a popular grab-and-go food, traditionally made with cooked pork, rice, onions, peppers, and various seasonings. It’s commonly found in Southern Louisiana, particularly in the Acadiana region, but also widely available throughout “Cajun Country”.
