L❤️VE IT!

So, the plan today is to go over to a Friends- Chica B Diego home and look at her backyard to get her advice on what kind of plants to get. She has a much bigger home here in Retama Village but I need advice on landscaping ideas and for Patio plants.

Later, Matt and I are going to go over to the National Butterfly place. ( not the official name). That slips my mind at this moment. 🙃

I would like to invite everyone to subscribe to our youtube channel. It is called Adventures in Retirement in the Rio Grande Valley with Mutt and Jules. Just go to youtube and search and you will find it and you can subscribe. We are about 1/2 mile from the border. We are are in Mission. We have 2 videos on there now and more to come including making soups and some of our sandwiches.

Well, we got our welcome packet last week and today Sharon dropped by with our badges and a couple of beautiful pot holders as a welcome gift.

Today, we went to Office Depot and I found a desk on sale and I practiced my Spanish to the very friendly man who helped me.

I said Disculpe' Senor, mi espousa is muy cansado. To be honest...I couldn't remember the word cansado. I knew it was it started with a C but lost it for a second.

Mutt and I have done fabulous doing our low carb the past 4 days. Tomorrow is our meal off and we have decided we are having Taco Pelenque (Mexican) tomorrow...then we will have 6 days until the next meal off on Friday.

I am going to try my best to get the youtube channel launched next week.

So, around 6pm, Matt and I walked over to the pool and clubhouse which is about 200 feet from our casita to swim. The pool is huge. I ran laps in the pool which is great exercise! I did some other exercises too.

Tomorrow, we are starting our modified low carb PLAN. I hate the word Diet!!

We are taking a scheduled cheat meal and dessert off once a week. That will be Fridays because for us, we have found if we do it on a Saturday...it is easy to just cheat all weekend!
So, we are going shopping tonight to get some food to get started.

So, I have the R.V. kitchen and microwave and we have a crockpot.

Today, I ordered an Emeryl French door oven/airfryer and it has a rotisserie, too. We are going to be grilling and are going to build a small outdoor kitchen. We do not have a kitchen in the casita so most of our cooking will be done outside.

I think I came up with a name for our youtube channel. It is: Retirement adventures in the Rio Grande Valley with Mutt & Jules.

Well, today is a little bittersweet...we have sold our Mt. Vernon home and are official residents in a upscale 55 plus retirement community in Mission, Texas.

My "mantra" lately has been- "It's going to be interesting".
And, that it will! We sold our 2500 sq ft. home and 5 acres with seclusion to move to a neighborhood with fairly close neighbors and our RV and a 240 sq. Ft. Casita (tiny home).

Wednesday, when we were doing the final pack up in Mt. Vernon, I saw several deer run thru the back yard. I always loved watching that! Here, I have butterflies, palm trees, and the promise of average temps in January of 72 degrees.

This morning, I looked out and saw a couple probably in their 70's walking to the mailboxes holding hands. He had on overalls and a straw cowboy hat! And, right behind him was a man riding a Segway with his 2 huskies running on each side of him. See what I mean when I say "This is going to be interesting".

There are water aerobics and block parties, gun clubs, pickleball and more!

Matt and I going to launch a Youtube channel in the near future about retirement and living full time in the rio grande valley. So, I'll let everyone know when that happens.

p.s. I am going to write a Sweet Home Texas Eatery Cookbook and I am learning Spanish. Not having a big mortgage is going to free us up to travel more!! So, we have that to look forward to, also.

Good Morning,

Dang, I had a frosted coffee from Chick fil A too late and could not get to sleep last night. I was still awake at 1:30am!!! P.S. if you haven't had one...they are delicious! They have an iced coffee concoction and I am going to try that next!! Not after 3pm, though! 🙃

I had an epiphany, though!! On the you tube channel, I am going to talk Matt into making some of our Sweet Home Texas Eatery Sandwiches like our Rueben and 4 cheese grill cheese. **** these are going to be included in the cookbook, too!

I guess our Chili, too! 😁

Hi Friends,

It is true that we have retired. I guess it will feel more like it once we get all packed up and totally moved.

I have knocked around the idea of a Sweet Home Texas Eatery Cookbook. I am going to do that! But...even more exciting...I am going to launch a Youtube channel. I will have soups and desserts but will also have our adventures in retirement...everything from downsizing to adventures in the Rio Grande Valley (which is where we are retiring).

Am I really retiring if I am launching a youtube channel? Maybe, semi retired? 🙃
