Did you know that when we first started this restaurant, we didn't serve gluten-free food?

I had PLANNED to have gluten-free options available, but we didn't really tell anyone that we had it for several months.
#1 I didn't think very many people would order it.
#2 I was nervous about implementing all the safety protocols necessary to keep people from getting sick.

But, we had some faithful, gluten-free customers, who were our guinea pigs, as we refined our processes and systems.
They were fantastic.
They trusted us, and they offered us so much encouragement during those early days.
They had such faith in us!
They had so much faith, that one of them posted in a gluten-free Facebook group that we had gluten-free options, and boy, it blew up from there!
Her post was the beginning of our gluten-free restaurant adventure.
We have continued to learn and improve every day. We take making safe, gluten-free food very seriously.

Do you know why?
Because I have a severe wheat allergy.
I understand how hard it is to eat out.
I understand how left out you can feel...
What a bummer it is to miss out on certain treats or foods.
And how easy it is to get sick from the meals you eat.

In fact, just yesterday, I got very, very sick at a restaurant. 😔 I even contemplated going to the hospital.
I started having pretty severe chest pains, my throat swelled and I had almost an immediate migraine. I haven'tfelt well since then. Not fun.
I definitely don't want you to have that experience at our cafe.
So we TRY our best to keep everything safe.
We do cook wIth flour though, so there is a chance of cross contamination, but we really try to keep you safe. 🥰

This is a graph of our sales today.
You would think that the huge jump this evening was from the big party we had next door.
But no, that was the hour BEFORE they came! Crazy, busy night, but we're so, so blessed.❤️
And so, so proud of our staff. ❤️
They worked their tails off.
(Yes! We had a group of 20+ people sitting in our new, rustic, all natural part of the restaurant 🤣😂)
It was great to see every one of you.
Old friends and new. ❤️
We know you have many, many choices of places to eat, so THANK YOU for choosing to eat with us. 🥰

When we went over and plugged in the lights, we both gasped!
It looks amazing... and gives us a glimpse of what is to come. 🥰😍

Boy, we were BUSY today.
Maybe one of our busiest Mondays ever!
And we had some issues in our kitchen this morning, which made it pretty stressful.
One of the "issues" was our cook got very concerning news about someone very close to her. She didn't miss a beat though. She just continued cooking through her tears.
Now that's dedication. 😔❤️
You know what it reminded me though?
This is just food.
I know we think it matters a lot that we get exactly what we ordered and that it is made perfectly...
But when you get news like that,
it just puts things in perspective.
It is just food.
There are far more important things in this world. ❤️
