So last week I made a stovetop shrimp boil for Raven and me. It’s one of our favorite meals. The tricky thing about any shrimp boil is timing. Potatoes, vegetables, sausage, and shrimp all need to hit the pot at different moments to make sure everything finishes perfectly cooked.

Unfortunately, as is often the case when you’re cooking around the chaos of a toddler, things didn’t go exactly according to plan. I got distracted and left the shrimp swimming a little too long. The flavor was still great, but the shrimp turned out tough and rubbery. We were tired, hungry, and not about to let good food go to waste, so we ate them anyway.

The real challenge came the next day. If you’ve ever had freshly overcooked shrimp, you know they’re not ideal. Leftover overcooked shrimp? That’s a whole different level of punishment.

Luckily, Raven came up with a brilliant solution. Instead of tossing them in the trash, we shredded the shrimp, made a simple scampi pasta, and tossed everything together. And let me tell you, that’s THE move. The butter, lemon juice, and white wine practically brought those shrimp back to life, rehydrating them and making them tender enough that you weren’t fighting your way through every bite. It was the perfect example of turning a kitchen mistake into a worthy dinner… a foul ball turned into a home run that night.

Summer, lemons, and blueberries go together like good friends, white sand, & an ice cold beer.

This dessert was a massive hit for a group of 15 we cooked for this weekend. Our bread puddings are legendary but I think I might start playing around with more crème brûlée flavors. Few things hit quite like cracking into that caramelized sugar🤤
