What a beautiful opening night 💛
Moab Kitchen is officially back for the season, and my heart is so full after Saturday’s Hearthspace Conscious Concert. Thank you to everyone who came out, shared a meal, got nourished, and supported this little nonprofit dream. Every plate served helps us keep showing up with warm, plant-based food and beautiful events for our community connection.

It means everything to be witnessed and supported in this way—truly!

🌿 What Is Kitchari?

Kitchari (or Khichdi) is a nourishing, porridge-like dish made primarily from split mung dal (yellow moong lentils) and rice.

It's considered one of the most easily digestible meals in Ayurvedic medicine.

🥣 Ingredients & Variations

Basic ingredients: split mung dal, basmati rice, ghee or oil, and spices like cumin, turmeric, ginger, and coriander.

Optional additions: vegetables (like carrots, spinach, or zucchini), coconut milk, or other grains (like quinoa or millet).

Can be made soupy or thick, depending on preference.

🌱 Ayurvedic Significance

Kitchari is often used in Ayurvedic detoxes (Panchakarma) due to its cleansing and balancing properties.

It's tri-doshic, meaning it can help balance Vata, Pitta, and Kapha (the three doshas or body energies).

It's thought to strengthen digestion (agni) while being gentle on the gut.

🧘‍♀️ Health Benefits

High in plant-based protein (from mung dal).

Easy to digest and soothing for the stomach.

Naturally gluten-free and often dairy-free (if made without ghee).

May help with gut healing, energy, and mental clarity.

📜 Cultural Context

In India, khichdi is often considered a comfort food, fed to children or the sick.

It’s sometimes served during religious fasts or as prasad (offering).

A variation of khichdi is even called the "national dish" of India by some food historians.
