Tried a new sourdough proofing method and… plot twist: it actually worked. 👀🍞

As someone with too many hobbies and not enough hours in the day, sourdough needs to fit my life—not hijack it. I love my usual recipe, but the time it took made it hard to keep up. Plus, looking back… I don’t think I was proofing it properly. (RIP to those underdeveloped loaves.)

So—I ran a little experiment. 👩‍🔬
• Fed my starter in the morning
• Mixed my dough while cooking dinner
• Stretch & folds while binging my show
• Then let it proof overnight at cool room temp (68°F)
• Shaped it in the morning and left it in the pan to proof all day while I was at work

12 hours later: no overproofing, no drama, just a beautifully risen dough that baked up like a dream. 😍

For once, I didn’t follow a recipe to the letter—and I’m so glad I trusted my gut (and my dough). 🙌

Once again, trying a new approach to my sourdough bread to save me time during the week.

I threw this together last night and did my stretch and folds- 8 hours later and it’s still not quite finished its bulk.

I’ll have to let you all know if this pans out. This bread recipe is legendary!
