✨ Meet the Chef behind your new favorite restaurant in Midway ✨
Being called Chef Beth Greenwell Carter is something I’m very proud of—it represents the hard work it took to get here.
How long have you been cooking?
I began my professional culinary career in 2013 after graduating from the International Culinary Arts and Sciences Institute in Cleveland, Ohio.
How did you get started in your culinary career?
I was a stay-at-home mom until my kids headed off to college, and that’s when I decided to pursue a new path in the culinary arts. One of my first big opportunities came right after culinary school when I was invited to study in Tuscany, Italy for a summer—and of course, I said yes!
Where are you originally from?
I was born in Hopkinsville, Kentucky and raised in Frankfort.
What is your favorite Kentucky dish or ingredient?
There’s nothing better than a summertime plate of fresh Kentucky vegetables—garden tomatoes, sweet corn, and squash.
Do you have a favorite dessert or signature dish?
We serve my grandmother’s orange juice cake at my bakery, and it’s a true favorite. I also love making a good brisket, but my real specialty is creating beautiful charcuterie and grazing table spreads.
What type of cuisine or cooking style do you enjoy most?
I love working with international flavors—and I’m always inspired by creating beautiful, thoughtful “girl dinners.”
What inspires your cooking or menu creation?
Seasonal ingredients, beautiful food, and the stories behind every dish.
