Did you know that Odessa, Texas most likely got its name from Odesa, Ukraine — our hometown on the Black Sea?

Before we tell you why our restaurant carries that name, there is one question we are often asked:

Why Odesa with one “s,” when so many Americans know Odessa with two?

They are the same city.

For decades, Odessa was the familiar English spelling, reflecting the Russian-language form of the city’s name. Odesa is the official Ukrainian transliteration of Одеса — a spelling formally standardized by Ukraine years before the war.

After Russia’s full-scale invasion of Ukraine, using the Ukrainian names of Ukrainian cities became especially meaningful to us.

So when it came time to name our restaurant, we chose Odesa.

Not because Odessa with two “s” means another city. It doesn’t. We simply wanted the name of our hometown to appear in its Ukrainian form — because this restaurant is being created by a Ukrainian family, and because this spelling gives our Odesa its own identity here in America.

And the name Odessa has traveled surprisingly far.

There is Odessa, Texas. Odessa, Delaware. Odessa, Washington. Odessa, Missouri. Odessa, Minnesota. And even here in Michigan, there is the village of Lake Odessa.

The name traveled across the Atlantic long before we did.

But for us, Odesa is much more than a name on a map.

Six generations of our family were born, raised, and rooted there.

It is the city where we grew up, met, fell in love, got married, and welcomed our son, Leon.

It is also where Sergey’s culinary journey began — peeling potatoes in a restaurant kitchen — and where, years later, he became the brand chef of a restaurant group, a restaurateur, and a well-known food blogger recognized by followers on the streets.

Much of that journey was built together — with Sergey leading restaurants and developing culinary concepts, while Christina shaped the marketing, media, and brands behind the projects they created together.

Christina’s grandfather even composed songs about Odesa.

This city is written into our family in more ways than we can count.

Odesa is one of Ukraine’s great Black Sea cities — known for its architecture, hidden courtyards, Opera House, bustling markets, long dinners, humor, hospitality, and, of course, the sea.

But what shaped Odesa perhaps more than anything was its position as a port city — a place where people, ideas, and cuisines continually met.

Ukrainian at its core, Odesa was also shaped by Jewish, Greek, Balkan, Mediterranean, and many other influences. Its food never fit neatly into one national category.

That same spirit is behind our menu.

We are not building Odesa around a narrow definition of traditional Ukrainian cuisine. We are building it around the kind of food people in Odesa actually grew up eating — comforting, generous food with Ukrainian roots and a distinctly European character.

So even if you have never tried Ukrainian cuisine before, much of the menu will feel surprisingly familiar.

You may discover new names and flavors, but you will never need to “learn” how to eat at Odesa.

That is the Odesa we want to share with Midland — not by recreating the past, but by carrying its spirit forward.

For most of our lives, we never imagined we would be building that story anywhere else.

Then 2022 changed everything.

War forced us to leave the city we loved and begin again thousands of miles away.

And that is where Midland became part of our story.

We did not find another Odesa here.

We found something different — a community that made a new place feel like home.

You welcomed our family. You encouraged us. You supported Chef Sergey’s Bakery. You have supported us from the beginning — coming through our doors, bringing your families and friends, sending us messages, telling us how glad you are that we’re here, and giving us the confidence to dream bigger again.

We will never forget that.

So Odesa by Chef Sergey is not meant to be a museum of the city we left behind.

It is a piece of what we carried with us — the generosity, the food, the beauty, the humor, and the belief that there should always be room for one more person at the table.

And now we are building it here, for the community that gave us the opportunity to begin again.

Odesa is the home that shaped us.
Midland is the home that welcomed us.
This restaurant is where those two stories meet.

Many of you asked to see more, so today we’re sharing another look at the future exterior design of Odesa by Chef Sergey.

These images are design concept renderings of the restaurant we are working to bring to life. Renovations are continuing every day, and step by step, the space is getting closer to becoming Odesa.

While we continue the transformation, we also wanted to answer some of the questions we receive most often:

What kind of restaurant will Odesa be?
Odesa will be a Ukrainian-European restaurant with food made from scratch, warm hospitality, and a full-service dining experience.

When are you opening?
We are planning to open in Fall 2026.

How large will the restaurant be?
Odesa will offer 100 seats, with room for date nights, family meals, celebrations, and group dining.

Will you have a full bar?
Yes — Odesa will offer wine, cocktails, spirits, zero-proof drinks, and signature selections inspired by Odesa.

Will there be vegetarian or plant-based dishes?
Yes. We want our menu to feel exciting and welcoming for many different guests. There will be plenty for those who love meat, fish, and seafood — but we are also working to create thoughtful and satisfying vegetarian and plant-based options.

Where will the restaurant be located?
Odesa is located at 1716 W Wackerly Street in Midland, MI.

A first look inside Odesa.

When we began designing this restaurant, we knew one thing: we didn’t want Odesa to feel like a place you save only for special occasions.

We want it to be beautiful enough for date night or a celebration — but warm, comfortable and approachable enough to become your regular place for lunch or dinner on an ordinary Tuesday.

And our menu is being built with exactly the same idea.

You’ll find plenty of dishes that already feel familiar — grilled steak, house-smoked ribs, beef stroganoff, salmon, garlic-butter shrimp, baked oysters and house chicken noodle soup.

Alongside them will be the dishes that tell our story: Ukrainian borscht, Chicken Kyiv, handmade varenyky and pelmeni, holubtsi, Odesa-style crispy chicken, beef with sour cherry, and made-to-order crepes.

You don’t need to know Ukrainian cuisine to feel at home at Odesa.

Come for something you already love.
Discover something new while you’re here.

And when we say made from scratch, we mean the whole plate — from broths and sauces to fillings, dumplings, entrées and desserts.

Odesa will also feature a full bar with wine, spirits, zero-proof drinks, signature cocktails and Ukrainian nastoiky — small-batch infused spirits that can be enjoyed individually or as a tasting flight.

When we open, we plan to serve lunch and dinner from 11 AM to 9 PM, with breakfast to follow once we settle into our rhythm.

Beautiful, but never intimidating.
Familiar, but never ordinary.

Our new Odesa by Chef Sergey website is officially live!

Over the past several weeks, we have been working not only on the renovation of the restaurant, but also on creating a place online where our Midland community can learn more about Odesa and follow our journey toward opening.

On the website, you can read the story behind the restaurant, meet Chef Sergey, explore a preview of our future menu, learn about our full-service restaurant and bar, and see the vision we are creating for the space.

You can also join our Opening List to receive important restaurant updates, opening announcements, and special invitations as we get closer to opening day.

We are still developing the menu and transforming the building, so many details will continue to evolve. We look forward to sharing the process with you and introducing more of the food, drinks, people, and stories that will make Odesa special.

A first look at the vision for Odesa by Chef Sergey.

We are transforming the former Antonio’s building into something completely new for Midland.

Over the next few months, we’ll be remodeling the exterior, redesigning the interior, and refreshing the kitchen as we build the restaurant we have dreamed about for years.

Our goal is to create a warm, beautiful, comfortable place where people can gather, enjoy real food made from scratch, and feel at home.

Dinner with family. A night out with friends. A glass of wine at the bar. Food that feels both special and comforting.

The remodel will take about 3–4 months, and we are planning to open this fall.

It’s official: Odesa by Chef Sergey is coming to Midland.

Almost four years ago, we came here from Odesa, Ukraine — carrying with us our family, our story, and the food we grew up with.

Chef Sergey's Bakery became our first way to share what we believe in: real food, made from scratch, with no shortcuts.

And for a long time, many of you have asked us one question:

“When will you open a restaurant?”

Now it’s happening.

Odesa is our home city on the Black Sea — warm, lively, generous, full of history, flavor, and hospitality. This restaurant is our way of bringing that spirit to Midland.

European dining. Ukrainian soul.
Scratch-made food, a full bar, meat, fish, vegetarian dishes, and the same care you know from our bakery.

Opening this fall.
