Not all coffee is processed the same way. After the coffee cherries are harvested, the fruit is removed and the beans are washed and fermented to remove the sticky mucilage layer that surrounds the seed. The coffee is then spread out on raised drying beds like these, where it is carefully turned and dried under the sun.
This method is known as the washed process, the most common coffee processing method in the world.
Washed coffees are known for their clean flavors, balanced body, and bright, well-defined characteristics in the cup. It's also the processing method used for most of the coffees that go into our blends.
Coffee's journey from cherry to cup is a lot more involved than most people realize.
