Tiramisu was not a dessert from my childhood in Ukraine, but the very first time I tasted it, I understood why people all over the world love it.

Layers of delicate sponge soaked in rich espresso, silky mascarpone cream, and a light dusting of cocoa create a dessert that feels elegant and comforting at the same time.

My little trick? I never rush tiramisu. It needs time to rest so every layer can absorb the coffee and become perfectly balanced. The next day is always the best day.

Opera Cake wasn’t a dessert from my childhood. My mom baked many wonderful chocolate cakes for birthdays, holidays, and family gatherings, but Opera Cake was something I discovered much later.

The first time I learned about it, I was fascinated by its elegance. Thin almond sponge layers, rich chocolate ganache, silky coffee buttercream, and a glossy chocolate finish — every layer has a purpose, every bite tells a story.

It reminds me why I fell in love with pastry. There is something magical about transforming simple ingredients into something so refined and beautiful.

My little trick? I never rush layered cakes. Giving them time to rest allows the flavors to blend together and creates that smooth, melt-in-your-mouth texture that makes Opera Cake so special.

I remember my mom baking chocolate cake for special celebrations. We didn’t have much, so a homemade cake always meant something special was happening. Some recipes are passed down on paper. Others are passed down through memories.

My grandmother used to make beautiful little pancake pouches filled with sweet homemade cheese. They looked like tiny gifts tied with string, and to us they felt just as special.

We didn’t have much growing up, but desserts like these made ordinary days feel like celebrations. Fresh raspberries from the garden, homemade jam, warm nalysnyky, and family gathered around one table.
