Staying small doesn’t mean you’re scared to grow, one location can still be impressive, and not every owner wants investors, ten stores, and a business they barely recognize anymore. One strong pizzeria can support a family, employ local people, feed a community, and build a reputation that actually means something. One great local business is not a failure to scale — it’s proof you built something worth protecting.

These are the top three things restaurant owners get wrong about building a good team.

They hire for a resume instead of work ethic, throw people into chaos and call it training, and never give employees a real path to grow. A strong pizzeria team is built by finding the right attitude, teaching people the right way, and giving them a reason to care about more than just a paycheck. A good team doesn’t happen by accident — ownership has to build it.

I’d rather train someone with no experience who wants it than hire someone with experience who thinks they know everything.

Experience helps, but attitude matters more in a kitchen, behind a counter, or anywhere inside a busy pizzeria. Give me someone who shows up on time, listens, asks questions, works hard, and actually wants to get better, and I can teach them the rest. Experience is great, but hunger is better — I can teach skills, I can’t teach someone to give a damn.

These are the top three menu items that expose a fake pizzeria immediately.

The regular cheese pie, the penne vodka, and the chicken cutlet tell you everything you need to know about a kitchen. Flashy specials might get attention, but if the basics are weak, bland, dry, watery, or clearly made without care, the whole menu is doing damage control. The simple items tell the truth — and if a restaurant only cares when the camera is on, the menu will expose it.

These are three more things customers do that prove they’ve never worked a real job.

Walking in two minutes before closing, ordering for ten people with no idea what anyone wants, and leaving your table like a crime scene all show a complete lack of awareness. Anyone who has worked in a restaurant, pizzeria, deli, or any real service job knows how much basic respect matters. Working a real job teaches you awareness and some customers walk in like awareness was never part of their upbringing.

These are the top three most annoying things food influencers do.

Tapping on the glass, using that fake excited influencer voice, and calling every single restaurant “the best” have all gotten old. If every pizza, sandwich, pasta, and hidden gem is somehow life-changing, your opinion means absolutely nothing. Food influencers don’t need more restaurants to review — they need a new vocabulary and a personality that wasn’t copied from TikTok.

Being family owned doesn’t automatically make your pizza good.

I respect legacy, tradition, and the people who built something from nothing, but a cute backstory doesn’t excuse dry slices, lazy service, or a pizzeria that stopped caring fifteen years ago. If your family name is on the box, the standard should be higher, not lower. Being family owned gets you respect — making great pizza is what lets you keep it.

I’m blind ranking specialty slices, and some of these should’ve never left the test kitchen.

Specialty slices can be incredible when they’re balanced, but a lot of them are just leftovers with mozzarella, a fake Italian name, and a dream. Vodka, buffalo chicken, chicken bacon ranch, BBQ chicken, eggplant ricotta, white slices, and chicken parm all live or die by whether the pizzeria actually knows what it’s doing. If your specialty slice needs six toppings to hide the truth, it probably sucks.
