Some of you don’t like well-done pizza. You like burnt garbage.

There’s a difference between crisp, char, and a slice that tastes like it survived a house fire, and too many pizza makers hide bad baking behind words like “old school” and “New York style.” Well done should still taste like pizza, not bitterness, ashes, and roofing shingles. Char is flavor; burnt is failure.

I’m ranking pizza trends as overrated or underrated, and some of you are about to realize your taste is embarrassing.

Hot honey, burrata, buffalo chicken, ranch, and penne alla vodka pizza have all gotten way too much personality for what they are, while thin crust still exposes who actually knows how to make pizza. Pineapple is overhated too, mostly because the people who complain about it are louder and more boring than the topping itself. If that offended you, good — some pizza opinions are built like a children’s menu.

These are the top 5 pizzerias not paying 10k a month for influencers.

Alitalia in West Babylon, Taglio Pizza in Massapequa, Villa Pizza in Lindenhurst, Villa Monte, and Frankie’s in Merrick are all spots that deserve real attention without needing fake hype. From chicken chipotle slices to old-fashioned slices, specialty selections, and bombolones, these places prove good food doesn’t always need a ring light. Some pizzerias build reputation with the bite, not the budget.

Anybody can hide sh*tty pizza behind toppings. Plain pizza exposes everything.

Dough, sauce, cheese, and the bake leave nowhere to hide, which is why simple slices scare fake pizza makers. If your plain slice has no flavor, weak sauce, cheap cheese, or a bad bake, no amount of burrata, hot honey, chicken cutlet, or TikTok toppings can save it. If your plain slice sucks, you’re not a pizza maker — you’re decorating bread.

You want to know why your staff sucks? Look in the mirror first.

Restaurant owners love blaming employees, but throwing someone behind a counter with no training and expecting them to magically know how your pizzeria runs is lazy leadership. Good teams are built through training, correction, respect, standards, and owners who actually put the time in. Bad staff is usually just lazy leadership wearing an apron.
