Lately, I have been into bread making. Sourdough starter has been life changing, as the possibilities are endless. A well-fed starter produces amazing results. This is the first time I have tried Asiago cheese inclusion. It turned out amazing. Usually, I go to Albertson's and buy olive rosemary bread, I think I might try that next.

Chocolate cremeux with pistachio ganache center. Let's just say I've been inspired by the viral chocolate bar from Dubai that I have been seeing on my feed. I thought about putting a crunchy center but because this is a ganache it would not stay crunchy so I opted out. The taste is milk chocolate with a hint of pistachio. The final taste test will have to be tomorrow because I also made a cake out of this frosting and I've had my fair share for today. Notes for next time: I think I prefer to make my own pistachio paste as I can control the saltiness, flow of batter and it has more simple ingredients. I made a pistachio paste a few weeks ago which I blended pistachios myself. It didn't look as pretty as this filling I made today, but it did taste better. It is not all about looks.

Here they are Raffaello and Kinder flavor macarons. The fillings are 👌
These took a while to make, and alot of thought process went into making these fillings. I was playing will it ganache with the Rafaello filling. To my joy it made a very beautiful ganache. What I did was I took the Raffaelo candies and put them in a blender then added some white chocolate chips and heavy cream along with just a little bit of cream cheese for stabilization, I also put a splash of coconut cream.
For the Kinder chocolate I got the recipe from an Instagram user called Elenamacarons, I did just add a splash of vanilla and some cream cheese for that oomph.

It has been a busy day, I now need to go to costco to stock back up on almound flour and heavy cream.

Strawberry macarons 🍓
I had a vision and brought it to life. This vision is inspired by my trip to Boise Co-op where I found the strawberry flavoring. I incorporated the flavor into both the strawberry coulis and the strawberry ganache. I used frozen strawberries to make the coulis and I put freezer dried strawberries into the ganache. My husband says the ganache tastes like strawberry ice cream.

French butter cream with lemon curd center. This was my first time making lemon curd, it turned out delicious on its own. I used preppy kitchens recipe. Personally, I don't like a center that is too sweet as the shells are already sweet. What I am looking for is a balance in flavor, slightly sweet filling with a tart center. Next time, I will reduce the sugar in the lemon curd I think by half. I also want to try pairing the lemon curd with a ganache instead, I am hypothesizing that it would be a better pair than buttercream. My favorite filling is the French butter cream so it is my first go to.

If you love Terry's orange chocolate ball and this one's for you. Sometimes our creative side gets the best of us. I got this orange cream cheesecake from Costco and I thought it would be fun to make a ganache out of it. The center is a chocolate crémeux.
Personally, I'm not that much of a fan of orange flavor I have come to realize. This ganache was also a nightmare to pipe. This is always a journey where I learn something new.

Behind the scene. This is my kitchen where I do my baking, getting ready to make macarons. I disinfect counters and sink before baking. Thankful to my kitchen aid mixer as it has been used and abused. Another handy tool is a digital scale. I pretty much bake only in grams, to me it is easier than washing measuring cups when all I have to do is zero the scale.

I'm Suzy, I enjoy baking as a hobby. It has always been my dream to start a bakery or a coffee shop, but I think to start a new business I must put my effort into creating a great product. I am very passionate about making macarons not just for the look but for a delicious taste as well. I like creating unique flavors from locally harvested ingredients, like raspberries, blackberries and black current. I've been trying to learn how to make a good macaron for over 2 years now. I have posted my macrons on my Instagram, I have failed many times as this is a fickle cookie to make. I work in a clean home and hand hygiene is my priority. I had a food-safe certification in high school. I am a registered nurse and have taken microbiology, I know the importance of preventing cross-contamination. I buy most of my ingredients at Costco. I make everything from scratch from the buttercreams to the fillings. The macaron fillings that I enjoy making are buttercream and ganache with a flavor filling inside typically. Right now I am making a flavor depending on my mood or special request.
